Oatmeal Bread


I got this recipe from a friend in Delaware. It is amazingly good. Spencer is not a roll guy but he ate three! He said these are the best rolls he's ever had. It's also a great way to use your food storage.

Oatmeal Bread

1 cup whole wheat flour
1 cup cracked wheat
1 cup quick oatmeal (do not use old fashioned)
½ cup brown sugar
1 tablespoon salt
2 tablespoon oil
2 cups boiling water

Combine above ingredients in the bowl of your mixer and let cool to lukewarm.

½ cup warm water
1 tablespoon yeast
Pinch of sugar

Combine above and let bloom.

Add yeast to warm whole wheat mixture. Add 3-4 cups of flour and knead until soft dough is formed. Dough will be sticky. Place in an oiled bowl, cover and let rise until double, about 1 hour.

Roll out on a floured board. Cut with biscuit cutter and dip circles into melted butter. Fold in half, and arrange folded dough in rows nearly touching the other. Cover and let rise for about 45 minutes. Bake at 425 for 10-12 minutes.

For bread:
Cut into 2-3 balls and form into loaves. Place on an oiled cookie sheet, cover and let rise for about 45 minutes. Bake at 350 for 30-40 minutes. When done, bread will have a hollow sound when rapped on the bottom.

Red Beans and Rice

1 lb Small Red Beans
Lots of Water
1 TBS Salt
1 Tsp Pepper
1 Tsp Smoked Paprika
2 TBS Cajun Seasoning (found at the dollar store, love it!)
1 Tsp Onion Powder
1 Clove Garlic - minced
Kielbasa Sausage (this is pre-cooked link sausage)
Rice

Soak Beans overnight in cold water, Drain and add to Crock Pot Cover beans with enough water to have a few inches above the beans, add all seasonings (yes, you can do real onions and different seasonings, I put mine together in about 5 minutes so I was in a hurry) Cover and cook in the crock pot on High 7 hours or Low 8-10 hours (you may need to add additional water). Slice Sausage layer plate under and on top of sausage with paper towels and cook 6-8 minutes in microwave. Add towards the end of cooking. Serve over Rice.

Real Rice
2 Cups Water
1 Cup Rice
1 Tsp Salt
Bring to a Boil, cover and reduce heat to low. Cook for 20-25 minutes.
